
Happy Halloween everyone! OK honestly, My own little Pumpkins could care less about both Halloween and candy so I wondered what I was going to post for this weekend. Enter, Chex Mix! Since the kind folks at General Mills have so graciously reformulated several of their wonderful cereals to be now totally Gluten Free, I felt it important to dedicate this post to them. The Chex Mix that I have chosen today is the chocolatey goodness that is Chex Muddy Buddies, a peanut chocolatey concoction that is just plain powdered sugar yumminess.I figured it would go well with Halloween as a nice snack to have at a kids party, or just to have around when you get tired of all the candy. ;) Now the original recipe is not Casein/Dairy free, so I have adjusted it below..Enjoy!
Chex Muddy Buddies..casein free version
(this recipe makes 18 1/2 cup servings)
9 cups GF Chex cereal (I used Corn, or you can use Rice or Chocolate)
1 cup Enjoy Life chocolate chips
1/2 cup GF nut butter (almond, peanut, whatever you choose)(I use Smart Balance)
1/4 cup Earth Balance 'butter'
1 tsp GF vanilla (I use McCormick)
1 1/2 cups pure cane powdered sugar
you will also need 1 gallon size plastic baggie
I don't use Microwave Ovens, so my version is stove top, feel free to access the Chex website for their version ;))
1. Measure cereal and pour into large bowl.
2. In saucepan heat on low the butter, chocolate, & peanut butter until smooth and creamed together. Turn off heat and stir in vanilla
3. Pour chocolate sauce over cereal and stir until coated.
4. Put coated cereal into a large gallon size plastic baggie and add powdered sugar.
5. Seal bag and shake, shake, shake ;)
6. Pour into sealable container and place in fridge to set for 15 to 20 minutes.
Voila! Now how easy was that? ;-D
