Recipe: Easy GFCF Black Beans & Yellow Rice

This easy dish is something that has evolved from things that my friend Vanessa taught me long ago. She is of Italian and Spanish heritage so she knows a few things about this type of cuisine, now I can't remember everything she said, but I've come up with this easy version that is healthy, yummy, and Gluten Free/Casein Free!
Rice:
1/2 cup white rice (I've been using Jasmine lately and love it!)
1 1/4 cups water
pinch of saffron (optional)
1 Tb. GFCF butter (I like Earth Balance)
salt to taste
In a medium pan bring to boil rice, water, salt, & saffron. When it reaches the boil, reduce to low & simmer for about 15 to 20 minutes, covered.
Beans:
1 can black beans (drained & rinsed)
1/2 tsp minced garlic
1/4 finely chopped large onion
1 Tb. olive oil
1 Tb. GFCF butter
salt & pepper to taste
In a small pan heat on medium olive oil, then add onions and cook until slightly translucent. Add garlic and cook for another minute. Then add black beans & about 1/4 cup or so of water and bring to slow boil. Cook covered for about 5 minutes, at the end add the butter and turn off the heat. add salt & pepper to taste.
Depending on how you like it you can serve beans on top of rice or mixed in..your choice. Enjoy!

Black beans and rice is one of my favorite things to eat- nice and cheap, too, which is always nice.
